I’ve always loved dippy eggs and soldiers but wanted to find a different take on the classic dish to make it a bit more exciting. Cue my dippy eggs and asparagus soldiers alternative. This little twist not only adds health points but it’s also delicious.
I’ve purposely left the quantities out below as it entirely depends on how hungry you are and how many people you’re cooking for.
- First wrap each piece of asparagus in a rasher of streaky bacon. Place the blanketed asparagus under the grill for 10-15 minutes until the bacon is nice and crispy. Make sure you turn them over half way through.
- Meanwhile, depending on their size boil your egg(s) for 3-5 minutes to get a runny consistency, perfect for dipping.
- Next, slice your sourdough bread and add a layer of grated cheese on top. Place under the grill for a few minutes until the cheese has melted and the bread is lightly toasted around the edges.
- Finally, serve up all the components with a sprinkling of pepper and a fresh orange juice.
For a healthier option scrap the cheese on toast and opt for pancetta or prosciutto instead of bacon.
