Aubergine Gratin Recipe

My aubergine gratin recipe (or eggplant gratin recipe for my non-UK readers!) is a delightful combination of summery flavours with a homely feel. Perfect for those evenings when you’re fed up of yet another salad and are craving something a little more substantial. It’s completely vegetarian friendly but if you’re a meat fanatic then it goes wonderfully with a herby chicken breast or seasoned lamb chops.

As with all of my recipes, it’s extremely easy to make. About 15 minutes of prep then pop in the oven, sit back, relax and wait for the oven to work its magic.

 

Ingredients

1 aubergine
1 large baked potato or 2 small
2 heirloom tomatoes
1 ball of mozzarella
Handful of black olives
Handful of fresh basil leaves
Olive oil for frying
Salt & pepper for seasoning

 

Method

  1. Preheat the oven to 180C/160C fan. Cut the aubergine into slices and fry in a griddle pan. If you don’t have a griddle pan then a frying pan will do just fine. You’ll probably have to do these in batches, unless you have a frying pan the size of a small child. Cook until browned on each side and beginning to soften. Place on a piece of kitchen roll.
  2. Meanwhile, slice the potato into super thin slices. Ideally use a mandoline cutter but if you don’t have one of these (really why would you) then just use a sharp knife but please don’t chop your fingers off. If you’re terrible at slicing, like me, and your slices end up fat not thin, then I’d recommend boiling them for about five minutes. Just to help soften them.
  3. Brush a pie dish / pyrex dish / casserole dish with some olive oil and layer in half of the sliced potato. Follow with half of the sliced aubergine. Then pop in sliced tomato, torn mozzarella, olives and basil leaves. Finish with the remaining aubergine and then the sliced potato. Whack in the oven for around 45 minutes.

Note: If you’re not intolerant to garlic and onion like me then I would probably add both of these to really liven the flavour.
